Once you make your own Tortilla wraps (and discover how easy they are) you will be adding them to every meal! The perfect accompaniment for spiced Middle Eastern koftas.
[restrict]Lamb Koftas:
- 500g Lamb mince
- 1/2 red onion – finely chopped
- 4 cloves of garlic- crushed/ minced
- 1 tsp ground cumin
- 1 tsp cumin seeds- lightly toasted
- 2 tsp coriander
- 2 tsp paprika
- 25 g fresh parsley chopped – stalks and all
- Salt & Pepper
- Add all your ingredients and mix well with your hands
- Divide into approximately 8-9 equal balls- leave this aside and make your tortillas
- In a pan heat a ½ tbsp oil, on a medium heat, cook koftas for approximately 6-8 mins- continuously turning to brown evenly
Tortilla wraps:
- 259g Flour
- 159 ml Warm Water
- 2 tbsp Veg Oil
- ½ tsp Fine Salt
- Mix all the ingredients together in a bowl
- Remove from the bowl and knead on lightly floured surface for 5 mins
- You will see how the texture of the dough changes as you knead and work the gluten
- Put back into a bowl and cover with a tea town for 15 minutes
- Divide into 6 equal balls
- Roll out on a floured surface, with a floured rolling pin – approx. 2mm thick
- In a hot dry pan cook for approximately 1-2 minutes turning half way
Fresh Slaw:
- 1 small head of red cabbage – shredded
- 2 carrots – julienned or grated
- Handful of mint
- 3 tbs Olive oil
- 3 tbs Lemon juice
- 1 thumb size piece of Ginger – grated
- Salt and Pepper
- Whisk olive oil, lemon, ginger, salt and pepper till well combined and pour over the salad ingredients and toss.
This can be made in advance
Yogurt Dip:
- 250 g of Greek / natural yogurt
- Juice of ½ a lemon
- 1 clove of garlic crushed / mined
- Handful of fresh coriander – can substitute parsley
- Salt & Pepper
Combine the above
- To Serve:
- Crumbled Feta
- Pickles
