Emma’s Middle Eastern feast

Once you make your own Tortilla wraps (and discover how easy they are) you will be adding them to every meal!  The perfect accompaniment for spiced Middle Eastern koftas.

Lamb Koftas:

  • 500g Lamb mince
  • 1/2 red onion – finely chopped
  • 4 cloves of garlic- crushed/ minced
  • 1 tsp ground cumin
  • 1 tsp cumin seeds- lightly toasted
  • 2 tsp coriander
  • 2 tsp paprika
  • 25 g fresh parsley chopped – stalks and all
  • Salt & Pepper
  1. Add all your ingredients and mix well with your hands
  2. Divide into approximately 8-9 equal balls- leave this aside and make your tortillas
  3. In a pan heat a ½ tbsp oil, on a medium heat, cook koftas for approximately 6-8 mins- continuously turning to brown evenly

 

Tortilla wraps:

  • 259g Flour
  • 159 ml Warm Water
  • 2 tbsp Veg Oil
  • ½ tsp Fine Salt
  1. Mix all the ingredients together in a bowl
  2. Remove from the bowl and knead on lightly floured surface for 5 mins
  3. You will see how the texture of the dough changes as you knead and work the gluten
  4. Put back into a bowl and cover with a tea town for 15 minutes
  5. Divide into 6 equal balls
  6. Roll out on a floured surface, with a floured rolling pin – approx. 2mm thick
  7. In a hot dry pan cook for approximately 1-2 minutes turning half way

 

Fresh Slaw:

  • 1 small head of red cabbage – shredded
  • 2 carrots – julienned or grated
  • Handful of mint
  • 3 tbs Olive oil
  • 3 tbs Lemon juice
  • 1 thumb size piece of Ginger – grated
  • Salt and Pepper
  1. Whisk olive oil, lemon, ginger, salt and pepper till well combined and pour over the salad ingredients and toss.

 

This can be made in advance

Yogurt Dip:

  • 250 g of Greek / natural yogurt
  • Juice of ½ a lemon
  • 1 clove of garlic crushed / mined
  • Handful of fresh coriander – can substitute parsley
  • Salt & Pepper

Combine the above

  • To Serve:
  • Crumbled Feta
  • Pickles
