Pizza purists avert your eyes! This pie may not be authentic but it is deliicious and faster than deliveroo.
Everyone on our feeds has a PHD in baking by this stage of lockdown but if your sourdough starter died on day two or you just need to get the melted cheese goodness into you face fast, this one’s for you. Easy pizza with no need to knead or prove or even plan ahead. Sure hashtag it #sourdoughpizza for the ‘gram – we won’t tell.

serves 1 (easily doubled for 2 etc)
For the base you will need:
75g flour (plus a little extra for dusting)
1/4 teaspoon baking powder
1/4 teaspoon salt
75g Greek or natural yoghurt
A little oil for cooking
For the top:
3 tablespoons tomato paste
1 tablespoon harissa
80g grated mozzarella
Plus your fave toppings; chorizo, salami, olives, sun-dried tomatoes, sure lash a bit of pineapple on there if you want, who are we trying to impress?!
Step 1
Preheat the oven to 200° FAN. Place the flour, baking powder, salt and yoghurt in a bowl and combine to form a soft dough. Dust the counter and a rolling pin with a little flour and roll out to a thin round base. Heat the oil in a non-stick frying pan on a high heat then carefully transfer in your base and cook for a few minutes on each side. It will puff up slightly and crisp. Remove from the heat and slide onto a board.
Step 2
Mix the tomato paste and harissa and spread evenly over the base. Cover with cheese and your choice of toppings. Then slide the pizza directly onto the the oven rack or use a baking tray if you prefer and bake for about 5 minutes. It’s ready when the cheese is melted and starting to colour.
