Sophie White’s Bastardised Lazy B*tch Thai-style Soup

This is my go-to, home-alone, there’s-nothing-in-the-fridge dinner. It’s the perfect store cupboard meal that still feels fresh and full of flavour. My secret? The oft-maligned freezer. There’s a snobbery around frozen food sometimes but I love my freezer, probably more than I love some members of my family right now (look, it’s week five of isolation pals, if anyone wants any dudes aged between eight weeks and 35, hit me up). The other secret to this soup is using a whopper, no-messing Thai curry paste — Mae Ploy is the only one I use, it’s ace.
